DK Island is part of the paid DLC for Donkey Kong Bananza called DK Island & Emerald Rush. This layer can only be accessed by those who have purchased this DLC.
DK Island DLC and Emerald Rush Guide
If you have not yet finished the game, you can still access DK Island as long as you have reached the Racing Layer at Sublayer 1100.
Head to the Racing Layer, and talk to Squawks there. They should be able to lead you to DK Island.

Those that have finished the main story of the game can access DK Island by simply by using a Warp Gong once you've already gotten the Rehearsal Hall explanation from an Elder.

There are 0 bananas and 0 fossils available in DK Island.
However, bananas and fossils appear on the island during the Emerald Rush game mode in order to provide the player with skills and perks. The bananas and fossils will disappear again once you exit this game mode.

Emerald Rush is a new game mode introduced in the DLC where all gold on the island turns into emeralds, which you will then have to collect. Talk to Void Kong near Void's Pay-Dirt Piledriver Checkpoint in DK Island to try out this game mode.
Take note that Emerald Rush is only available in the post game.

Banandiumtone is a new NPC in DK Island that has glyph puzzles for you to solve. Completing their puzzles will reward you with the Quick-Change Tie.
Banandiumtone is found near the Banandiumtone's Floating Islet Checkpoint on DK Island. When you first encounter them, you’ll see a single glyph above their head. This marks the start of an 8-step puzzle.
Banandiumtone Puzzle Solution and Guide

At Squawks's Hut, you can exchange Banandium Chips for statues that will be displayed on the island. In addition to decorating your island, statues can be picked up and used like a terrain chunk. If you want to return them to their original positions, you can talk to Squawks around the island to tidy them up.
