There are a total of 17 main story bosses in Donkey Kong Bananza, all of which can be fought as you naturally progress the game.
Do note that these bosses are fought chronologically, with the exception of bosses in either Freezer Layer or Forest Layer as these battles will depend on what route you'll take in The Divide.

Destroy the Breakable Objects in Boss Areas or Bosses' Body Parts
The bosses in the game will often have breakable objects that can be found on their bodies or areas where you fight them. Try smashing these objects to exploit a weakness that can help you beat these bosses easily.
Use Bananza Forms to Your Advantage
Bananza Forms are temporary transformations that buff your strength, speed, and overall abilities in the game. These transformations can help you overcome obstacles you encounter during boss fights.
You can use the Kong Bananza Form to dish out powerful attacks like Charged Punch, or the Zebra Bananza Form to dash towards rock walls summoned by bosses during battle.

Immobilize Bosses by Destroying Their Armor or Specific Body Parts
Bosses will sometimes get immobilized when you've exposed them out of their armor or damaged certain parts of their body during battle in Donkey Kong Bananza.
Use the opportunity to attack relentlessly and chip away a hugh chunk of HP from the boss once they're immobilized.
Try Boss Rush Mode During Post-Game
Take the Challenge and Repeat Boss Battles Using Boss Rush Mode
Once you've finished the game, you will be able to unlock Boss Rush Mode from talking to Grumpy Kong and paying him 10,000 for the Baboomtown Restoration Project.
From there, defeat all the familiar bosses you've fought from your game progress to earn 6 Banandium Gem Bunches. Make sure to try out the Boss Rush Mode if you feel like challenging yourself and repeating some boss battles.
