Nostalgia Country is a Challenge Ruin in the Hilltop Layer in Donkey Kong Bananza. See the walkthrough, all bananas, including the location of the first banana, and location of the Challenge Course here!
Nostalgia Country, as its name suggests, is an easter egg referencing the original Donkey Kong Country game, with the entire course being a side-scrolling level.
The first banana in Nostalgia Country can actually be found near the start of the challenge level. Before you make your way to the right, face the challenge entrance and perform a Chunk Jump to reach the wall above it. Climb the wall and enter the hidden house to find the hidden banana on its ceiling.

Make your way to the right, defeating or avoiding enemies along the way and using the barrels to go up and across gaps. The second banana is on a ledge just after the barrel puzzle in the middle of the course.
All Easter Eggs and References

The third and last banana is located near the exit and right after the Crockoid. You'll need to use your Bananza Power and transform into Kong Bananza to defeat the Crockoid.
A single Charge Punch is enough to completely destroy the Crockoid, allowing you to progress safely to the next area.
How to Unlock and Use Kong Bananza Form
There is an alternate path you can take using the Barrel Cannons that can earn you more gold and launch you straight through a metal gate and into the Crockoid, destroying its armor. You can then punch the Crockoid once to defeat it.

To reach the hidden first banana in Nostalgia Country, face the challenge entrance and grab a chunk of the ground. Perform a Chunk Jump with it to reach the climbable wall above the entrance then climb up to Donkey Kong's House.

You'll need to jump on the tire in the middle of Donkey Kong's House to hit and eventually break the third Banandium Gem on the ceiling.

Found near the entrance of the Undertone Canal. You will have to clear the Void Seals to access this course.

There is seemingly a breakable grate buried at the end of the level where you defeat the crockoid.
