Check the Snow For Poppy Kong's Trail

Check Ice Path

Poppy Kong is invisible throughout the duration of this battle, so you will need out the snow to know where she might strike. If the snow suddenly shows a trail, follow it to strike Poppy Kong.

You can try using the Zebra Bananza Form so that you can better follow her in the snow with your speed.
