You can buy Fur Color for Donkey Kong at Style Shops. Fur Color requires a specific type fossil to buy. Given that fossils are hidden within the environment, it will take a lot of exploring before you can collect enough to buy the Fur Color you want for Donkey Kong.

Strangely the natural color looks very reddish to me, the rest of the game looks fine and it's just in this game too. He looks fine in Mario Kart World
