If you don't mind using cheats to find it, Greydwarf Shaman can also easily be spawned with the console command.
To spawn the enemy, first turn on cheat codes by typing imacheater in the F5 console, and use the spawn Greydwarf_Shaman command to spawn the enemy.

Greydwarf Shamans have a special attack that can inflict poison. You should avoid this as much as possible since making Poison resistance mead is hard to do early in the game.
When you get close to a Greydwarf Shaman they will start attacking like a Greydwarf or a Greyling. You can do this method so they don't use their poison attack as much and parry them with any shield.
