Circle Around Them

Circling around the Fenring is the best strategy to use while trying to kill it. While doing this, the Fenrings attacks won't be able to hit you and you can attack them in between their own attacks.

Parry their Punches

The requirement to be able to parry the Fenring's attacks is pretty low. You only need a Bronze Buckler to parry the Fenring's attacks. Since the Fenring's attacks are easy to read, you can do this and attack the moment they are stunned.
