If you don't mind using cheats to find it, Fuling Berserker can also easily be spawned with the console command.
To spawn the enemy, first turn on cheat codes by typing imacheater in the F5 console, and use the spawn GoblinBrute command to spawn the enemy.

When you encounter a Fuling Berserker, you will most likely encounter them in Fuling Villages. It is very important to kill all other Fulings first before dealing with the Fuling Berserker.
Fuling Berserkers have a move that makes them attack three times in a row. This move is to be evaded as much as possible since this can kill you if you make a mistake parrying this attack.
Parrying the wide swings can be fairly easy since the attacks are slow and you only need a Bronze Buckler. Doing this will leave large openings for you to attack freely.
