Soy is currently the best Defender in the game between him and Yuki, and it due to his Wild Runner passive being an automatic taunt to enemies to hit him more frequently. He also gets ways to reduce damage received on top of gaining his HP back with Desperado. Give him an ally that grants shields like Leon or Riddle, and he can freely tank all the hits for the team.

Taunt Enemies With Icy Defense
Soy's main role is to protect the party by taking the enemies' attack. Use Icy Defense to increase the chances of him being targeted.
Icy Defense also increases the Max HP of the whole party, which can help characters like Key and Skull since their skills use their HP.
Increase Max HP
Raise Soy's Max HP to bring out the best from Icy Defense. His other skills also benefit from having a high Max HP.
Use Smash Hit to Debuff Enemies
You can also use Soy to weaken you enemies. Use Smash Hit to decrease the defense of your enemies.
When Desperado is active, the defense debuff is bigger. Soy activates Desperado by getting hit by enemy attacks.

If you want to increase the effects of Icy Defense, focus on raising Soy's Max HP first rather than upgrading the skill. Increasing the level of Icy Defense only raises the Max HP cap and the amount of HP restored.
It is better to prioritize increasing the skill level of Smash Hit since the defense debuff goes up along with its level.
You can leave Icicle Hatchet for last. You will rarely use Soy as an Ice DPS since you get Mont from your first pull.

Since Soy increases the Max HP of the party, he is compatible with Skull, who gets stronger depending on his missing HP. With a higher Max HP, Skull can use his skills in their best state, while keeping an optimal amount of HP.
Leon is the best buffer for Skull since Justice Barrier also reduces his HP. You will also need Puppet to protect Soy while he absorbs the enemies' attack.

The Control and Departure Card Set helps Soy become a better tank and damage-dealer. Dominion grants an HP increase which benefits Soy, whose skills scale based on his HP.
Departure, meanwhile, inflicts a Defense debuff on enemies when they are hit by a skill. When used with Smash Hit, the defense debuff is colossal.
