The fishing hut works pretty much the same as Hunter's Lodge. Locate the best fishing spots and purchase gear and permanent buffs to make you a master angler.
There's only a single instance in the entire main story which requires fishing (Our Right to Party), so feel free to skip this one until you are ready to dig into the deeper features the game has to offer.

While there are certain items in the game that require fish meat, there isn't much sense to prioritize this camp facility over the others.
If you are the overprepared type, certain La Cantina recipes, which sells meals that provide some nifty effects, do need fish meat so feel free to hunt them down via the upgrades you get here.
