Dying in Crimson Desert causes you to restart from the last checkpoint without any penalty. See more details regarding what happens when you die and what you can do to prevent it here.

When you die in the open world, you will respawn from your last location. However, if you die while climbing a mountain or a high location, the game will teleport you to the nearest campfire or waypoint.
Dying does not reduce the Abyss Artifact experience points. You will respawn with the same number of experience points.

When you die during a boss battle, you have three options: instant revive, retry, or give up.
Instant Revive lets you resume the boss fight with 30% at the cost of using a Palmar Pill and Retry restarts the fight from the very beginning. Choosing give up respawns you from the last checkpoint before you activate the boss fight.
It is recommended to only use the Instant Revive option when you are about to defeat a boss with multiple phases. This is because the item that you use to instantly revive, the Palmar Pill, is very rare and difficult to find.
Check the red bar on the bottom left part of your screen to see if your health is about to run out. When this happens, use a healing item such as food to restore lost health.
Getting better gear or Refining your current equipment allows you to survive longer when it comes to enemy encounters and tough boss fights. If you find that your health gets reduced quickly by enemy attacks, consider upgrading your equipment first.
