Other mounts can be stolen or taken from NPCs in the world. This can be either through getting them off the mount in the case of soldiers/NPCs and then riding them yourself or either just taking or stealing them in the non-hostile zones.
Some large animals like a bear can be beaten into submission and used as a temporary mount. To do this, keep attacking until they stop moving and a prompt to ride them appears.
You'll then be able to use the animal as a temporary mount until you dismount. Some of them, like the bears, will turn hostile and go back to attacking you as soon as you dismount.
Non-permanent mounts are those mounts you cannot register and summon as a mount as you would for horses. The only permanent mounts in the game are the horses and the dragon, the other mounts are all temporary.
These temporary mounts are categorized as Fleeting Companions in the Knowledge Journal. There are a total of 11 of them, consisting of 10 Wildlings and 1 Machine.
