In addition to repeating side quests, different colored pots give you different bonuses in battle. One of these is the red clay pots which provide gold when broken! This specifically gives 150 G per pot!
Bullions are rewards for finishing Quests for the first time. They're sold to merchants for 2,000 G each! Collecting and holding on to a few before selling them can net you quite a lot of money!
Weapons are a major loot item during quests, and you're likely to find some good gear along the way. While it won't net you gold in the thousands like the Bullions, you can certainly sell your unused weapons for extra gold!
Balthus' unique ability, Golden Fists, allows you to earn extra gold at 300 hits and above. This can be exploited even further by giving him the Merc Whistle. Doing so will allow you to use this ability as Shez.
Buying ingredients for cooking is one important thing to use your gold for! Each meal, not only increases support points with your allies, but also gives different bonuses in battle!
The Armory, especially when upgraded, can provide several useful weapons throughout the game. Unfortunately, it can cost quite a bit of gold, which is why it's important to save up!
Earning Support is an important aspect of Fire Emblem: Three Hopes and gifts are a part of that. You can offer gifts to your allies, matching them to their likes and hobbies!
These can be bought from the Merchant for Gold or occasionally found in Survey Spots.
Some Survey Spots will require small amounts of Gold to access the rewards and can give you important items such as Crude Building Material.

Balthus has been helping me with Gold - his ability causes attacks above a hit count to earn gold, 300hits at LV1 down to 150 by LV3, and increasing the amount. Playing normally with him, not going out of my way for combos, I usually get between 5-20k extra gold per battle. Using the Merc Whistle for him also means getting the Shez classes to have the Gold Fists ability, which ups the Hit Count ease further
