Yes, you should sell valuables in Dragon Age: The Veilguard. Valuables are a specific class of item that, as of writing, have no other purpose other than to be sold to vendors and merchants for gold.
You can choose to sell Valuables to the in-game factions' shops to increase your Strength with them. Raising your Strength with each faction brings its own benefits, such as access to more items from their faction shop.
Note that some valuables are more desired by certain factions, and selling it to them will provide more strength than usual.
Certain Valuables can provide a minor stat boost when acquired, and some merchants can carry these types of valuables. Note that these buffs are minute and should only be prioritized if you have extra cash.
