When you clear the game, you wil able to see the total number of Heart Pieces, Might Crystals, and Stamps that you still have to collect. Open the Map and press the Y Button to see the total number of items.
After completing the game, the Deku Tree at the Eternal Forest will tell you the locations of Echoes that you have not yet learned. Note that he will only tell you the number of unregistered Echoes in each region but does not tell you their exact locations.

There are a total of 40 Heart Pieces to collect in the game. There is no reward for collecting all Pieces of Heart but this is one way to make battles easier.
Collecting all 150 Might Crystals lets you fully upgrade your Swordfighter Form abilities. In addition, Lueburry will use your remaining 25 Might Crystals to create a statue outside his house that fully restores your Swordfighter Energy Meter.
Collecting all 25 Stamps in Hyrule gives you plenty of rewards include a Bottle and the Stamp Suit. Once you collected all the Stamps, you can find the Stamp Guy at Kakariko Village.

After completing the game, you can find the missing Echoes that you have not learned yet. There is no reward for collecting learning all Echoes.

Collecting all 6 Automatons will earn you 5 Monster Stones as a reward.
Collect all the ingredients you need to create all 69 smoothies. There are rewards for learning 10 and 30 new smoothies, however there is no reward for learning all smoothies.

There are a total of 15 stages to complete in the Slumber Dojo minigame. Progressing through the milestones in the minigame gives rewards such as Heart Pieces, Accessories that delay Swordfighter Energy consumption, and the Green Tunic.
There are a total of 50 side quests to complete in the game. Each one gives a reward but there is no reward for completing all of them.
There are 28 Accessories to collect all over Hyrule. These can be found in treasure chests inside caves or as a reward for completing side quests.
There are 8 clothing items to collect after completing the game. 3 clothing items are amiibo exclusive and if you have those, you can get a total of 11 clothing.
All Clothing and Outfit Locations
There are 4 minigames that you can play after completing the game. You will need to complete other gameplay content to access these and allow you to earn rewards such as Pieces of Heart and Might Crystals.
Although optional, you can try your luck and start a new game on Hero Mode. This is the game's Hard Mode difficulty, giving you an extra challenge to beat the game from start to finish.
