To unlock the side quests on Eldin Volcano, you must first complete the main quest The Rift on Eldin Volcano, which becomes available during the Lands of the Goddesses main quest.
The Rift on Eldin Volcano Walkthrough
Aside from the said main quest, you'll also need to complete Automaton Engineer Dampe and The Fireworks Artist side quests to finally unlock A Mountainous Mystery.
With the pre-requisites done, you can now formally start A Mountainous Mystery quest by going to Goron City and talking to Gol. He will tell you that the chief went to the summit.
Talk to Darston inside the Summit Cave found in the northern area of Eldin Volcano and The Mountainous Mystery quest will be added to your log.

How to Complete | |
---|---|
1 | Talk to Darston and he'll tell you about mysterious noises coming from the Summit Cave and a folktale about a fire giant. |
2 | Head into the cave and use the Lava Rock echo to get over the lava spouts. You'll encounter a lot of these lava spouts throughout the dungeon. |
3 | After getting through the first lava spout, use the wall to climb around the corner and on top of the existing lava rock. Summon another echo of a lava rock on the third lava spout to get over it. |
4 | Follow the path onto the next lava spout and you can use other echoes such as the Cloud to skip straight to the platform with the door. Other methods may also work such as using Bind on the neighbouring Lava Rock to place it onto the lava spout. |
5 | Get through the next area normally until you climb the wall to the upper level. |
6 | Get on top of the lava spout using a Lava Rock and use Cloud echoes as before to skip to the platform with a ladder going down. |
7 | Down the ladder, wait for the lava to go down before continuing ahead and climbing up to safety with a chest containing 50 Rupees. |
8 | After the lava goes down again, continue on and climb up two sets of ladders. |
9 | Right as the lava goes down, drop down the ladder and use Strandtulas to get across and up to the platform with the exit ladder. Another solution is to projectile summon a Lava Rock to the right wall and summon a pair of Boulders right next to the ladder so you can reach your Lava Rock. Place another Boulder on the right edge of the Lava Rock so you can squeeze through and reach the ladder. |
10 | Up the ladder, you'll find a door that leads to the boss fight with the Igneo Talus. Prepare yourself with the right echoes for the fight. ▶ How to Beat Igneo Talus |
11 | The Igneo Talus will drop a Heart Piece once you defeat it. Afterwards, a portal that leads back to the entrance will appear. |
12 | Head back to Darston at the entrance of Summit Cave and tell him what happened. He will reward you with a Goron's Bracelet and the quest will be completed. |
The Igneo Talus is similar to the Seismic Talus, except it's on fire and has four "phases".
You can also only damage Igneo Talus by attacking its glowing blue core, which can be removed temporarily using Bind. This is easy to do during the first two phases, as the core remains at ground level.
However, starting in the third phase, the core moves to the boss's upper body, making it harder to reach. Wait for the boss to perform a ground slam before using Bind to remove the core.
Completing the quest will earn you the Goron's Bracelet which is an accessory you can equip to increase carry speed.

The part suggesting to use Strandtulas to cross the lava did not work for me. It's much easier to just use the Tweelus echo to make a bridge. They float in the lava and you can ride the last one up to the top as the lava rises.
