You first need to unlock the Barn and taming feature to gain access to the feature to ride monsters. Unfortunately, this doesn't happen early in the game, as you need to reach and complete the initial story in the Autumn Village before you can get a mount.
Once you progress in the Autumn Village, you will unlock the Barn building which allows you to tame monsters and befriend them with the Plum Branch.

Do note that not all monsters in the game are rideable. You can check if the monster you have tamed is rideable or not in the Bestiary under the Adventure Log menu or when a monster is placed in a Barn.

Once you tame a rideable monster and placed them in a Barn, you need to include it as a part of your team.
To include a monster in your party, open the Party menu and select any party slot. Change the menu from Village Residents to the Monsters tab, and you'll be able to see the list of all monsters you have tamed.

Once you have included the monster in your party, head to an open area outside a village to bring your party out in the overworld. Approach the monster and press the button indicated to ride on top of it.
Once you are riding a monster, you'll have access to light and heavy attacks. You can also gather resources while mounting a monster.
Do note that you cannot ride monsters inside villages, as you are only able to do so when the rest of your party is out.

Riding a monster is slightly faster than just sprinting, so it can be useful at times to ride a monster instead of running around.
However, the difference isn't noticeable when you're just travelling a short distance, and it might be better to just run on foot. It is also faster to equip the Sacred Fan and sprint, as this Sacred Treasure gives you a speed boost when sprinting.
While riding a monster, your light and heavy attacks are unique to the monster you are riding. These attacks have long ranges and affect a wide area, so it can be useful against a crowd of enemies.
However, since you cannot attack yourself, you will lose on dealing high damage, especially if you have good weapons, so it can be better to go down your mount when facing against tough enemies.

There are certain monsters in the game that can fly using their wings. However, once you ride on top of them, they cannot freely fly and will still act like grounded monsters.
If you want the ability to fly, you can use the Sacred Parasol that you can obtain once you reach the Winter Village.
