Have the Plum Branch equipped in your Sacred Treasures. When a monster's HP is low, use the Dance of Bonds so that you can befriend it. Do not defeat a monster before performing the Dance of Bonds or else you will be unable to tame it.

When a smiley face appears on top of the monster's name, that is a sign that you can attack it. When the monster's HP reaches zero, it will be knocked down instead of disappearing, which will allow you to interact with it.

Monsters can be befriended by gifting them an item that they love. Sometimes, you will need to gift it multiple times depending on the monster. You have three chances to give the correct gift.
If you are successful, a screen will pop up asking you to name it and it will be sent back to your Barn. If you run out of chances, the taming window will end.
If you become no longer interested in taming the monster, you can send it back to the Forest of Beginnings where their soul will return to a peaceful world.

Bosses can also be tamed the same way with regular monsters.
To tame bosses, bring its HP down and perform the Plum Branch's Dance of Bonds, then defeat it by knocking it down.
Once you can interact with it, give the boss its favorite item. You have three chances to gift the correct item or the dance will wear off and you will not be able to tame the boss.
You can also send it back to the Forest of Beginning if you want to cancel your attempt in taming the boss.

Monsters can produce items that you can either sell in the shipping bin, or use for upgrades, equipment, and other recipes. You can view what each monster produces using the Bestiary.
You will only unlock monster taming after completing Autumn Village Revived 1. If you try to use the Dance of Bonds on a monster before doing this quest, you will not be able to befriend it, and it will be defeated like any other monster.
