In order to gain access to the alternate route behind the waterfall, remove the Liepard from the rock in front of the waterfall by throwing an Illumina orb at it. Once the Liepard is out of the way, scan to reveal the entrance to the alternate route, and hold X over the icon that appears to take the new path. This can only be done on research level 3.
To access the route behind the waterfall, remove the Liepard and Pikipek asleep on the rock in front of the waterfall by playing Melody while approaching them. Immediately scan to reveal the entrance to the alternate route. This can only be done on research level 2.

How to Unlock All Research Titles
You can complete the request Tonight's Dinner by snapping a photo of Morelull eating a fluffruit behind the waterfall in Jungle (Night). This request is also unlocked after your first time going behind the waterfall.
You can complete the request Operation Be My Friend! by snapping a photo of Leafeon eating a fluffruit behind the waterfall in Jungle (Day).
