The Vitality Warrior uses weapons without scaling, allowing to put all stats into Vitality. In other words, upgrading your weapon is the only way to increase your damage output.

Strength and Dexterity will have no influence on weapon damage, so this build will put the majority of its stats into Vitality and Stamina. Of course, there will be some minimum requirements in order to wield weapons, but there is no need to increase those stats any higher than the required minimum.
There is no particular change in the way the Vitality Warrior build plays compared to other melee builds. Two-hand wielding will raise your damage, but there will be no scaling with Strength.
Dragon weapons, or weapons infused with fire, are a good match for the Vitality Warrior. A Dragon Long Sword can be picked up within Stonefang Tunnel. Also, by defeating the bearbugs in the tunnels, you can get Dragonstone, which can be used to upgrade Dragon weapons.
One unique weapon that does not scale is Northern Regalia. Depending on the player's World Tendency, this weapon can have extremely high damage. One drawback though is that it cannot be obtained until NG+. However, the Demonbrandt weapon can be obtained before then. That being said, getting ahold of the Demonbrandt is no easy task.
