The Fermentation Process of all Mead Bases in Valheim requires two in-game days to complete, which roughly translates to about an hour of playing time. You can speed this process up sleeping during the night.

Fermenters need to be sheltered with a roof on top of them — Wood Floors on top of a Fermenter will not count.

Destroying Filled Fermenters will not Refund Mead Bases

Valheim (Fermenter) - Destroying an Active Fermenter.gif
Destroying Filled Fermenters (Fermenters with Mead Bases inside), regardless if they're active or not, will not refund the Mead Base inside or the materials used in creating said Mead Base.

Make sure the Fermenter is empty by letting it finish the fermentation process first before destroying it.
