The main purpose of the Fermenter is to turn Mead Bases into Mead. These are akin to potions in other games so they are very important in your adventures.
It is important to note that Fermenters need to be sheltered in order to function
How to Create Mead Bases Using Cauldrons
The Fermentation Process of all Mead Bases in Valheim requires two in-game days to complete, which roughly translates to about an hour of playing time. You can speed this process up sleeping during the night.
Recipe List: How to Craft All Items
Fermenters need to be sheltered with a roof on top of them — Wood Floors on top of a Fermenter will not count.

Destroying Filled Fermenters (Fermenters with Mead Bases inside), regardless if they're active or not, will not refund the Mead Base inside or the materials used in creating said Mead Base.
Make sure the Fermenter is empty by letting it finish the fermentation process first before destroying it.
