How to Clear Sprinting in Surprise
Throw Fluffruit into the Oasis Water
Once you reach the oasis section of Sands (Day), start throwing fluffruit into the water of the oasis. The goal is to keep throwing fluffruit until a Magikarp comes splashing out of the water, which will suprise the sleeping Heliolisk and cause it to start running. Throwing the fluffruit directly at the Heliolisk will not do anything.
Where to Throw Fluffruit
If you're just entering the oasis, you'd want to throw fluffruit to the left side of the oasis water (the side closer to the main route), so that the Magikarp spawns behind Heliolisk, which will cause it to run towards the direction from which you came.
From the Branching Route
You can also complete the request even if you took the branching route off to the right side of the oasis. However, this time, you'd want to throw the fluffruit around where the Hippowdon and Torchic are, so that the Magikarp spawns in the direction Heliolisk is facing, which will cause it to run in the opposite direction (towards the alternate route).
Snap a Photo of the Heliolisk on Water
After getting the Magikarp to surprise the Heliolisk, on whichever route you took, you have to snap a photo of Heliolisk as it's running on the water. It takes about 3 quick steps across the water, but it should be enough to get a photo.

Only worked for me by taking the alt path. Helio will jump off the island on the right and run on the water after tossing like 5 FFs on the left side of the island to trigger Magikarp.
