In Park(day) there's a Grookey and a Pichu who are friends. In Park(night) there's a chance you can find them sleeping with a Torterra. It's adorable you don't want to miss it.

Snowfield Lv 2 (Night). Knock the Weavile out of the tree just before the ramp. Throw a fluffruit into the hole near the fallen Weavile and instead of a Furret, out pops the Delibird.
On Undersea Level 3 - boost, and hold boost, as soon as you hit the first alternative route. Catch up to the four Inkays and hit them all with an Illumina ball. If you're fast enough, the front one will speed ahead and put the Tentacruel to sleep before it can hypnotise the Starmie.

In the badlands there is a section where you can see a tepig a torchic and a luxio running across a log, this is a reference to the lion King
Many pokedex entries are refrenced, even obscure ones. For example, on of doidrio's pokedex enties states only 2 heads can sleep at a time, the other must watch for danger. Well, this is exactly how dodrio sleeps in new pokemon snap! There's a bunch of others too, but i'll let you guys find them out. ;)
When taking the route that comes nearest to the Lapras and I think do the request of the Lapras singing, it is a smaller male Lapras and a bigger female Lapras. A mother and son. This most likely is a reference to Ash his Lapras who was a baby when he caught him and was released to be with its mother again.
While I'm at it, the Charmander in the Lentalk request "Volcanic Hide-and-Seek" are a callback to original Snap's Charmander that would just keep coming from over a hill in the Volcano area if you kept throwing fruit. Even the Graveler you can throw a fruit at so it drops into your path and stops you for a while is a reference to the Moltres egg that was on the path and stopped you right in front of the Charmander! Got one! Mew's voice as well as the pose it makes right before teleporting if you hit it with an illumina orb are the same as in original Snap, where it was the final "boss" pokemon! The one of the first Pokémon seen is Dudrio, a nod to this being the evolution of the 64 version where one of the first Pokémon seen was Duduo.
