When you unlock the Mysticism Civic, you choose an additional buff to give to an Altar. This lets you grant an additional bonus to your yield/s of choice.
Not all Gods can be applied to your civilization. For example, some Gods require a Quarter or specific tiles to activate. Assess your settlements, resources, and tiles before choosing one.
If you are playing the Maurya civilization, you can get two buffs from the Pantheon list. This allows you to be flexible in your early game strategy.

Just like Wonders, if another civilization has chosen a Pantheon, other civilizations cannot select it. If a Pantheon is crucial to your early game strategy, consider prioritizing Culture yield to get it first.
Pantheons are only present in the Antiquity Age. Altars will still give a flat Happiness yield, but it is recommended to replace it with a Temple or other useful buildings. You can do this by creating another building on top of it, if it is a stacked Urban District.

If your settlements are nearby Rough Terrain and resources like Salt and Marble, you should take advantage of Stone Circles. It will grant an additional Production yield for Clay Pits, Mines, and Quarries.
