When using an Ascendant Floret, we recommend getting the next superboon if it fits the hero. If not, consider what stat your hero needs most.
As a hero obtainable only through Tempest Trials, Itsuki will always have neutral IVs by default. The only way to access IVs for this unit is through using Trait Fruits.
The best IVs for Itsuki are +Atk and -Res. His weapon is strong against dragon units so having a +Atk stat will maximize the 1.5x damage multiplier. His Res stat is of less importance, so it is safe to take it as a bane. If he is able to land a one-hit K.O. on dragon foes, he would not need his Res stat!
We recommend a +Spd IV when merging Itsuki to 10. At +10 Merges, Itsuki's Atk will reach such high levels that pushing it up higher is a waste, considering he has access to Mirage Falcon. At this point, it would be better to opt with a +Spd IV instead to help him take less follow-up attacks and allow him to make some follow-up attacks on his own.

This refine might not be as impactful as others, but it still provides Itsuki good effects in-combat that improve his damage output and survivability.

Itsuki is a close ranged physical attacker (range = 1). Therefore, when not accounting for the Weapon Triangle, the amount of damage he deals will be equivalent to his Atk minus the foe's Def stat.
Itsuki's exclusive weapon skill Mirage Falchion is effective on dragon foes, and grants an Atk/Def bonus during combat. When Itsuki initiates combat, the effect increases with the number of allies who have ended their movement, and if the foe initiates combat, the effect increases with the number of foes who have ended their movement. This will give him a max of Atk/Def+7, and at the minimum, Atk/Def+3, making it a very powerful combat bonus.
Itsuki's B Skill Atk/Def Link will give him and an ally Atk/Def+6 when one of them uses a movement assist like Swap or Reposition on the other. Since he learns Swap by default, his skills have rather good synergy, allowing him to go offensive or play more of a support role.
Itsuki's C slot skill Drive Def will grant Def+3 to allies within two spaces during combat. This skill stacks with other bonuses and works just by being near his teammates, making it very useful and easy to activate. Combined with the effect of Atk/Def Link, allies will gain +9 in their Def stat.
With rather low Spd and Res stats, Itsuki is prone to enemy follow-up attacks, and cannot handle many magic attacks. he does not have any way to raise his Res on his own, so one attack from a speedy mage or dragon will inflict massive damage on him. Make sure he stays out of the range of magic attackers.

Ituski can be foddered of to learn the skill Atk/Def Link. However, as a unit only obtainable through Tempest Trials, the number of duplicates you can obtain is limited, so think hard about whether or not you are okay with foddering him off.
Itsuki is a limited time Hero who can be obtained as a reward for your score in the Tempest Trials. They do not appear in regular summons. After the event has ended, they can be obtained by using Heroic Grails.
