Hunting Spears are Captain Tools that can only be used when you embark on a Dhow ship class.
Luckily, the starting ship, Exeter's Jolly, is part of this ship class, and you would not need to craft another one to start hunting.

Similar to other ship weapons, Hunting Spears can be aimed before shooting.
Press the corresponding buttons on your platform to aim and shoot Hunting Spears:

Also, Hunting Spears can be charged to be more accurate and deal more damage. Hold the shoot button on your platform to start charging, and let go when shooting.
Well-timed charged attacks from Hunting Spears can stun animals and interrupt their attacks. Interrupting their attacks is vital if you want to survive hunts without depleting your Repair Kits.
To stun an attacking animal, make sure to start charging an attack, and shoot as they begin attacking you. Fortunately, you do not need a fully charged attack to do this trick.
Repair Kit I |
Consider bringing Repair Kit I with you when hunting animals. When left unrepaired, animals can sink your ship eventually with the damage they deal.
While Repair Kit II and above restore your ship's hull health for more, they also have a higher cooldown. Make use of Repair Kit I's 20 second cooldown when your ship gets hit.
Do not forget to upgrade your Hunting Spear! As a Captain Tool, you can upgrade Hunting Spears with the Carpenter when you have the required Infamy and materials:

Hunting with a small ship without cannons may seem risky, but doing so rewards you with animal skin that you can refine into animal hides. Hides are crafting materials used in better items and ship parts.
Additionally, you can get meat from the animals you hunt. You can eat it raw to restore crew stamina, but cooked or grilled meat will restore more.
