The stat growth for each personality is ranked from H to SS, with H negatively affecting a stat, D having no changes, and SS giving the biggest boost.

A new stat called Resilience was added in the Dragon Quest 3 remake which relates to a character's defensive stats. The stat is also affected by stat growth bonuses or penalties depending on the personality.

A few personalities have had their name changed in the remake as gender limitations have been removed for the Hero.
Do note that even if the names were changed, these personalities still have the same stat growth rates from before and will function the same.

With the remake replacing gender settings with appearance settings, the Hero can now get any personality from the quiz done at the beginning of the game.
However, there are still some limitations when it comes to changing personalities after making your character, as you can change these with books and other items.

The personality of your character is determined by the personality quiz done at the start of the game or while creating characters in Rudia's Tavern.
Once you've decided what job you're going to focus on, make sure to check the conditions necessary to determine your personality.

Best Personality for Each Job Class
Personalities can be modified by using books or using certain equipment. Using the former can alter your personality permanently while the latter's effect takes place only when the equipment is used.

Personalities are used for a character's stat growth. For example, if a character's personality is focused on Strength (STR), it will be easy to increase that stat while other stats, such as Agility (AGI), will be harder and will require more resources.
Be sure to choose a personality that corresponds with the job you want to play.

Paper Tiger took a bit of experimenting, but all I need is 2 Seeds of Defence, 2 Seeds of Stamina and one extra seed for their proper class, as well as "rerolling" if it doesn't work out. (Of course, there are rare occasions where I can get 6 Seeds instead of 5, but that's beside the point.)

Correction on that last comment, Paper Tiger basically requires a number Seeds of Defence (Defence point boost) for most starting characters except the Hero and is very unlikely that the Priest, Mage, and the Gadabout would obtain it and there are no equip items or books that can change into that. It's like the Everyman (Ordinary) personality with no extra penalties and bonuses, but with extra Stamina to tank in for a few more hits.
