Have a Party of Thieves Steal from Foes

Dragon Quest 3 - Thief Skill Screen.
The only way to farm seeds in Dragon Quest 3 is through stealing items from opponents with high levelled Thieves in your party.

The more Thieves you have in your party, the better since there will be more chances for each member to try and steal an items from enemies during battle.

The likelihood of Thieves successfully stealing an item from enemies isn't determined by agility or luck of the party member.

Stolen items are all RNG during battle so there is no sure way to ensure that grinding certain enemies will drop a specifc kind of seed.

What Are Seeds Used For?

Raising Raw Stats

Seeds are used to raise your raw stats in Dragon Quest 3. They can be used by the Hero or they can be given to other party members to raise their own stats.

List of Seeds and Stats Raised

Item Effect
Seed of Agility Increases Agility stat by 1-3 points.
Seed of Life Raises the maximum HP by 2-5 points.
Seed of Luck Increases Luck stat by 1-3 points.
Seed of Magic Raises the maximum MP by 2-3 points.
Seed of Resilience Increases Defense stat by 1-3 points.
Seed of Strength Increases Strength stat by 1-3 points.
Seed of Wisdom Increases Intelligence stat by 1-3 points.

They cannot be bought, only found or stolen from monsters through battle.
