You can use Seeds to adjust a character's stats and change their personality to better fit their vocation. It is a good idea to farm Seeds throughout the game to have a steady supply of these items in case you want to change personalities.
Do note that each vocation may require different stat changes before their personality can change.

Wit is a great personality for Mages and Priests thanks to its high Wisdom stat growth. The Genius personality also has high Wisdom growth, but Wit has no defense stat penalties which makes it a better choice.
