Since the Garboyle likes to use Fire Spells and Breath attacks, you'll want to make sure that you wear equipment that resists those types of moves. However, defense is still important so make sure you strike a balance when sorting out your equipment.

Burning Breath can be very disruptive, especially if you're trying to set up buffs or heal. It's recommended to at least give your supports ways to prevent paralysis, like by using Full Moon Rings, so that they can cure any affected party members with Tingle or Sobering Slap.
On top of your equipment, you'll also want to cast Magic Barrier and Insulatle to reduce the damage of its Spells and Breath attacks respectively. Make sure to have these active at all times so that you don't have to spend as much time and MP healing.
Another way to deal with their constant barrage of spells is to cast Fizzle. This will prevent them from casting any spells, but you'll still need to cast Insulatle to reduce the damage of Inferno.
Garboyle has pretty high defenses, plus they can Dazzle and lower the attack of your party members. The best way to counter this is by using Monster Pile-On as your main form of damage since it only takes into account the number of monsters recruited, and it doesn't matter what your or your opponent's stats are.
Because of this, you want to make sure that you've recruited as many friendly monsters as possible before heading into this fight so that the damage of this attack is maximized.
All Friendly Monster Locations
If you have the Warrior's Forbearance skill, you can combo it with a Mage or Sage's Bounce to effectively apply Bounce to your entire party and reflect all spells back to the Garboyle.
However, this will also reflect friendly spells so make sure to bring other ways to heal your Forberance user, like using Abilities or items, in case they tank an entire Inferno for your party.
Once the Garboyle is at low HP, it will use Channel Anger to increase the damage of its spells. This could easily wipe your party if you're not prepared so use Kaclang to ignore any of its attacks and wait out until Channel Anger ends.
