The Giant Bearbug is highly resistant to physical damage. Using spells or weapons that deals magic is extremely helpful for dispatching the Bearbugs.

Use Status-Inducing Ailments

Weapons that can deal poison, plague, and bleed can be extremely helpful in dispatching the Giant Bearbugs. Hit them a few times and apply the status ailment, leave and explore the area, and comeback after hearing it's death explosion. This will take longer than the first method but is effective nonetheless.
