The first way to parry is by making use of the Clash weapon trait, which allows you to negate damage received while timing your attacks with the enemy weapon attacks. Discipline skills with clashing effects are capable of fully negating all damage, while Light, Heavy, and Charged heavy attacks will only negate a portion of the damage you receive.
Do note that kicks and punches cannot be clashed so it is best to dodge these types of attacks whenever you can.
Combat Guide and Advance Fighting Tips
Deflecting allows you to completely negate damage from enemy weapon attacks. In order to deflect, you will have to use Sword Counter or Block at the same time the enemy weapon attack lands to negate damage.
Sword Counter can be found at the southwest side of the Impetus Repository by the Longsword skill tree, while Block is a weapon skill unique to the Twin Bandits that lets you deflect attacks when timed correctly.
Keep in mind that the Block discipline skill of Axes can only reduce damage taken at the cost of stamina and do not have Deflect attached to them.

The main difference between the two effects are that clashing is triggered by timing your own attacks with enemy weapon attacks, while deflecting is a skill that blocks enemy weapon attacks when timed correctly.
