Some weapons have certain Weapon or Discipline skills that have the Deflect trait attached to them such as the Longsword once you have the Sword Counter node, and the Twin Bandits which give you Block as their Weapon skill which cannot be swapped out.
Axes always have Block as their default Discipline skill but are not counted as Deflecting when used correctly.

In order to unlock Deflect on your Longsword, you first have to take the Sword Counter discipline skill at the Impetus Repository skill tree. This is located at the southwest side of the skill tree by the Longsword nodes.
Once you have the node slotted in, it will prompt you to equip it at the Discipline selection menu. You can now go ahead and pick a Longsword you want to use and swap out the default Discipline skill with Sword Counter to start deflecting.

In order to Deflect, you first have to time the skill just before the enemy attack lands. This will completely absorb the damage you take, providing you with openings to execute powerful skills and attacks.
Certain skills can have additional effects such as Sword Counter - Variant I which allows you to expose their Vulnerability when deflecting attacks, staggering the enemy and setting them up for Obliterate to deal huge damage.

Deflecting allows you to negate damage by blocking or parrying enemy weapon attacks using certain skills such as Block or Sword Counter. Unlike clashing, this allows you to completely prevent damage instead of only taking a portion of it.
Do note that punches and kicks cannot be deflected and trying to do so will cause you to take damage instead.
