Metagen Remnant's attacks are easily telegraphed due to her slow animations and long charge times so we suggest to focus on dodging into her attacks as much as you can. This allows you to stay within range of her and continue dealing damage as she has a large amount of health for you to whittle down.
Should You Guard, Counter, or Evade?

Metagen Remnant's weakpoint is her head as this deals the highest damage among all the different parts of her body. Make sure to focus on attacking her head by using jump attacks and Long-Range Magic Formae to help you consistently deal good damage and defeat her faster.

Partners drawing aggro will not be useful for this fight since most her attacks can cover a wide range. Instead, we recommend assimilating with Josee to further increase your stats for more damage and survivability throughout the fight.
Keep in mind that your Partner can still revive you even if they are assimiliated so feel free to stay aggressive.
Should You Summon or Assimilate?

If you find yourself getting inflicting with Acid most of the time, we recommend equipping the Resistance Booster - Wound and bringing Acid Vaccines to cure Acid inflictions and help you mitigate the acid buildup. Although the damage is barely noticable, it is best to avoid to any afflictions that can hinder your run.

You can find Metagen Remnant at the Sunken Pylon in the southern border of Sunken City during the Slaying the Hero Josee questline. Take note that this has to be in the 2179: The Hero Josee's Era timeline in order for you to access the Metagen Remnant boss fight.
Defeating Metagen Remnant will drop the Glutton's Eyes Blood Code that you can equip to help build your character as you progress through the game.
Defeating Edward the Lost Corporal will drop the a Glutton's Eyes key item to progress the questline, the Glutton's Eyes rune blades, and 6,300 Haze that you can use to level up, upgrade your equipment, and buy items from merchants.
