1. Talk to Boatman At Reverent Temple
When you speak to the Boatman at Reverent Temple, he will prompt the a tutorial Boss fight, Bai Kru.
Defeating it doesn't impact the story but will reward you with 5 Red Mercury Essence which are used in the Impetus Repository.

2. Talk to Boatman At Tang Emperor's Palace
The Boatman is only accessible by answering wrong at the Benediction Gate at Tang Emperor's Palace. You will be teleported to a nearby building after answering Feathered Transcendance to the nearby Benediction Gate when prompted. He will be at the backyard, digging graves. After talking to him, you'll be rewarded with a Crystallized Red Mercury.
Keep in mind that answering the wrong answer at the Mystery Gate will lock you out the Sage achievement.

3. Talk to Boatman At Ferry Overlook
You can speak with the Boatman by the docks at Ferry Overlook before leaving for Bai Mansion, and he will cryptically mention a demon that seems to be connected to you.
When you take the boat and defeat the demon, Monstrous Toddler - Bai Kru, speak to the Boatman again. He will laugh at the irony of the Bai line being cut short by its own blood, then reward you with Li Jiao's Fang.

4. Talk to Boatman After Honglan in Ruined Worship's Rise
After defeating Vermillion Feathers Honglan near Palace Pass, enter the Mystery Gate and the Boatman will be there. If you talk to him, he will remark the shortcomings of a mortal life then send you off to your next objective.

5. Talk to Boatman Inside the Mystery Gate At Bo Capital
Nearby the Depths of the Capital shrine is a Mystery Gate. Interact with it, and answer The grand dream fades when prompted. It will reveal the Boatman in the distance. Talk to him and you'll be rewarded with a Lustrous Red Feather.

After exiting Reverent Temple, head down the stairs and speak with the Boatman. Be aware that this will trigger a tutorial boss fight.

You can find the Boatman digging graves at Tang Emperor's Palace in the backyard of the building. You can access that building by answering Feathered Transcendance to the nearby Mystery Gate when prompted.

Defeat Vermillion Feathers Honglan at Palace Pass, then enter the Mystery Gate. The Boatman will be by the foot of the stairs.
