To unlock Pianta, you need to be transformed by Kamek while racing on Mario Circuit. It seems that the character you transform into depends on the course and your location within the course.

The image above shows where we were able to unlock Pianta! The star is where Kamek was used and the diamond is where we were transformed by Kamek into Pianta.
