Listed above are all the courses you can start from to access your desired course's reverse track.

Each course in Mario Kart World typically starts on a default path. However, when selected as part of a series of linked tracks, some courses can be entered from the opposite direction, unlocking a reverse version that may feature alternate routes.
This only works when a course is approached from a specific direction. However, there is no method to know beforehand if the track will be reversed or not.
For example, entering Desert Hills from tracks positioned south or east will let you access its reverse layout, while entering from the north, such as from Shy Guy Bazaar, it will load the default layout instead.

While reverse tracks feature the same tracks but raced in the opposite direction, some reverse tracks drastically change the course layout! For instance, entering Shy Guy Bazaar from Airship Fortress reveals a completely different path exclusive to the reverse version.
Unfortunately, reverse courses and their alternate routes can’t be chosen directly from the course select screen. You must play them as part of a connected track series with the correct directional entry to unlock these hidden layouts.
These hidden reverse tracks are not to be confused with the mirrored tracks from playing Mirror Mode. While reverse tracks feature the same courses but in a different direction, mirrored tracks are the courses flipped vertically.
There is no dedicated Reverse Mode in the game that allows you to race courses in the opposite direction. However, there is a hidden trick to access reversed versions of tracks when playing them in a series.
By selecting a your desired course as part of a set of tracks from other tracks in a specific direction, you'll be able to play reversed versions with some even featuring new alternate routes!
