To permanently increase your maximum health, you have to find Idunn Apples found in Nornir Chests. You can find and open these chests after completing puzzles in different areas across the realms.
By equipping armor sets or amulet enchantments that increase your Vitality stat, you'll be able to boost Kratos' max health and stagger resistance. The more points you have in your Vitality stat, the higher Kratos' max health will be.
Stats Explained: All Stats and How They Work
Sometimes when you fight enemies, especially bosses, or break objects in the surrounding area, there's a chance they'll leave a small green light on the ground called Healthstone.
By standing near it and pressing the Circle button on your controller, Kratos will stomp on it and allow himself to be healed by a small amount.
Another way Kratos can heal during combat is through Spartan Rage. During this mode, Kratos will deal heavier melee damage and heal himself for every hit he lands on an enemy.
You can effectively extend the time you can heal using Spartan Rage by obtaining Horns of Blood Mead, which will increase your maximum rage.
Some equipment or talisman in the game can be equipped to obtain effects that will allow Kratos to heal himself over a period of time. You can get these by defeating enemies or doing side quests that will sometimes reward you with such equipment.
