There are five classes in Dune: Awakening, namely the Bene Gesserit, Mentat, Swordmaster, Trooper, and Planetologist, but only four starting classes to choose from. You can't change your class after character creation, but the game's class system is flexible enough that class choice will only affect minor things and won't affect skills or builds in the long run.

Planetologists are trained scientists and explorers who provide significant quality of life advantages, helping you survive the harsh environments of Arrakis.

Dune: Awakening's class system is pretty flexible, and your class choice doesn't really have any major effects to the story or your build late-game.
Your starting class determines your first ability and skill tree, but you'll be able to unlock all class skill trees through trainers as you progress the game.
Class choice also determines your unique gesture and gives minor changes to dialogue, like your homeworld and caste choices.
Since you'll eventually unlock all skill trees, you should just pick the class with starting abilities most suited to your desired gameplay. Here's a cheat sheet of how each class plays:
