You can do a slide cancel by jumping or ADS-ing (Aiming Down Sight) in a middle of a slide. It takes a couple of practices to master this technique, and you need to be familiar with all the button controls to perform it properly.
Note: You can only do a slide cancel on a regular sprint. Slide canceling while Tactical Sprinting will result in a Dive instead. You can turn off the Tactical Sprint in the Settings menu.
Enemies will have a harder time hitting you once you master the slide cancel technique, especially at close-range. Your movements will become more difficult to predict and follow, giving you a time window for a split-second decision.
You can do a slide cancel when you have to peek at an area in the field. It will allow you to fall back, reposition, or shoot back if there's an enemy in the place you're headed to.

As of the Open Beta, slide canceling now results in slightly slower movement gains since it can now only be down while regular sprinting. The Tactical Sprint slide command has now been replaced with the Dolphin Dive mechanic, instead.
Slide cancel is a popular evasive movement technique that started in Call of Duty: Warzone. It makes players more agile and harder to kill on the field.
However, the controls and movement in Modern Warfare 2 have small differences from CoD: Warzone, so you might need to re-learn and adjust to the new mechanics to slide cancel in this title.
