Battling enemies in every area is the most basic way to gain EXP. Focus on clearing groups of monsters and don’t skip areas, as even low-level mobs add up quickly to help raise your party’s levels.

Menacing monsters are enshrouded, powerful enemies that appear stronger than their usual counteparts.
Defeating them will reward you with a monster heart and a significant EXP boost. Once they are beaten, they will no longer spawn in the game.

From the Difficulty Level options in the System Settings, you can tweak EXP, proficiency, gold earned, monster strength, and damage dealt, giving you either a faster leveling pace or a more relaxed grind depending on your preference.
Best Difficulty Settings and Differences

Metal Slimes and its variants in the Slime family give tons of EXP but they only appear as rare bonus enemies as they rarely show up in the overworld. Although, as a note, equipping the Metal King Slime Heart will increase the chances of encountering Metal Slimes.
Metal Slime Locations and Farming Guide

Equipping the Metal Slime monster hear will boost your EXP gained by 20%. The Metal Slime heart is included in the Jam-Packed Swag Bag! DLC content which is included in the Digital Deluxe Edition of the game!

Metal Slimes and their stronger variants do not appear as visible overworld enemies in Dragon Quest 7 Reimagined. Instead, they spawn occasionally as part of an enemy group when battling normal overworld monsters in specific locations. Because of this, farming them relies heavily on RNG.
The locations listed above are the currently confirmed Metal Slime farming spots, but this list is not yet complete. We’re still actively tracking additional spawn points for Metal Slime enemies, so be sure to check back soon as more farming locations are discovered.
Dragon Quest 7 Reimagined's level cap is 99. While players can't get any more stronger from this level onwards, they can still continue to get stat increases by making use of Stat Seeds.

This article says that metal slimes do not appear in the overworld, but I just had a metal king slime in the overworld at La Bravoure.
