The first thing you should do is set your difficulty level to Easy Going. Not only does it make monsters easier to defeat, but it also increases the EXP gained by 1.5 times more.
If you prefer to play on a harder difficulty setting, then you can change the Difficulty Level back to your preferred settings after you are finished raising your Vocational Proficiency.

Having the Battle Speed set to Ultra-Fast speeds up battles and saves you a lot of time.

While you can instantly defeat monsters without battling them if your party level is high enough, it is still better to do a full encounter since you earn more proficiency points.
When you complete a battle, your Vocational Proficiency increases by 7, but if you defeat monsters in the overworld, your proficiency increases only by 1.
EXP Farming Guide: How to Level Up Fast

The Ballymolloy Region is the first region you get to explore in the game, and is the easiest place to level up Vocational Proficiency from Level 1 to 5. There are enemies you can encounter outside the village that you can quickly defeat using Maribel's elemental attacks. Defeating enemies will drop Gold which you can exchange for Items and Equipment at the Ballymolloy Village.

The Tower is another area in the Ballymolloy Region where you can farm monsters from Level 6 to 10. This Tower is full of enemies on different floors, and there are Angel Statues that you can interact with to heal when needed. You also have the chance of obtaining a Thorn Whip from one of the Cactiball enemies, one of the best early game weapons, which you can equip on Maribel.

Progressing the game shortly after completing the Ballymolloy Region, you will unlock the Ship, which you can use to travel between islands in the present day. Navigating through the seas, you can randomly encounter enemies, who can drop Gold and EXP, and is a fast way of farming in the present.
