The most obvious change from the older versions of Dragon Quest 7 is the new visual style. The Reimagined version has a new "Hand-Crafted Visual Style" that mimics dioramas rather than the classic Dragon Quest art style.

Along with the new visuals, Dragon Quest 7 Reimagined also makes some changes to the story to help make it more streamlined and enjoyable. This means that some content from the older versions may be cut, but it's also likely that they will add new story elements as well.
To help further bring Dragon Quest 7 Reimagined up to modern standards, the BGM and SFX of the game have been revamped as well. You can expect some of the classic songs and sounds from DQ7, but polished up with a fresh coat of paint.

Similar to the HD-2D Remakes of the Erdrick Trilogy, Dragon Quest 7 Reimagined offers a ton of quality-of-life improvements. Examples of these are the on-field shortcut commands, being able to see enemy weaknesses and resistances, and seeing where you can find items and collectables.

To help make Dragon Quest 7 Reimagined easier for newer players, there are new difficulty setting options to help make the game easier or harder. Some options include damage dealt, experience and gold earned, enemy strength, and more!
Similar to modern Dragon Quest titles, Dragon Quest 7 Reimagined now has full voice acting for all the characters in the game! Outside of the silent protagonist, every party member and important NPC now has English and Japanese voice lines.

In the original version of Dragon Quest 7, Kiefer leaves the party permanently and never returns to his friends to join them on their journey. In the Reimagined version, Kiefer returns as an adult, but it is yet unknown if he joins permanently or if he's only a temporary party member.

Dragon Quest 7 Reimagined makes some changes to how battles work. Besides the feature to speed up fights, you can also automatically defeat weaker enemies on the field, use "Let Loose" to activate powerful Vocation-specific effects, and actions can be selected between turns instead of all at once!

Instead of having one Vocation at a time, party members can now equip two! This opens up a ton of new possibilities in battles, and this new system also allows you to change vocations without needing to return to the Alltrades Abbey.
Instead of the Monster Masher Vocation, Dragon Quest 7 Reimagined has the Monster Master Vocation instead. While the exact features haven't been revealed yet, it looks like you can now summon monsters instead of using their abilities yourself.
