When using an Ascendant Floret, we recommend getting the next superboon if it fits the hero. If not, consider what stat your hero needs most.
The best IVs for Valentine's Hortensia are +Spd and -Def. Hortensia's Spd is quite high at base 48, raised to 52 with a superboon, and is a fantastic IV to boost due to her Frozen and Null Follow-Up effects making it more difficult for her foes to generate follow-up attacks.
Hortensia's Def is below average and can safely be taken as a bane as reducing it will not impact any of her matchups. She will still likely survive one attack, especially if she utilizes her Spd advantage to deny follow-up attacks.

Valentine's Hortensia's low base 21 Def leaves her vulnerable to physical damage, especially due to her status as a Far Save unit.
There are still quite a number of ranged physical attackers in the metagame, and Valentine's Hortensia will be vulnerable to those units.
Valentine's Hortensia takes 1.5x damage from armor-effective weapons like Randgríðr, and one blow from this type of weapon will deal significant damage. Make sure you know what weapons you are up against before hopping too far into the line of battle!
