LoL get 3600 stats is very possible for a FTP what know what is doing ATM.
These stats to aim for are so unrealistic for F2P.
Only B rank and lower. B+ veterans aren't available to choose in Open League.
Can you switch Umas between races? Like for example if I have a team with Evil Nature for round 1 and I end winning, can I then edit my team and swap her out for someone else?

No, you just wont be able to use it
For open league, I know you have to use B graded horse. If I have a A graded horse does it gets downgraded to B to enter into the league.
