Curren Chan is a fairly easy Legend Race to beat, so feel free to pick any Umamusume that is proficient in Sprint aptitude or can be easily converted to it!

Above is our safe estimate to winning the Curren Chan Legend Race consistently
For building Sprinters, focus on maximizing Speed and Power while still having enough Stamina to survive the distance. Skills that help boost velocity/acceleration and alleviate stamina loss (like Moxie, Straightaway Recovery, or Swinging Maestro) will greatly increase your chances of winning this Legend Race.
You can go with the usual Speed-Wit (3 Speed/3 Wit) deck with strong 9★ Stamina Uma legacies. There's also the other support card setups 3 Speed/3 Power, 4 Speed/2 Power, or 4 Speed/1 Power/1 Stamina (or Guts).
300 Wit is recommended to at least reliably proc velocity and stamina recovery skills (such as Swinging Maestro) if your stamina will be lacking.

Curren Chan has significantly less Stamina than previous Sprint Legend racers. She does, however, a debuff skill (Adored by All) that can cut down your Uma's Stamina.
You can get around Adored by All padding your Uma with stamina recovery or by having a strong Pace Chaser/Front Runner that can stay ahead of Curren Chan.

Star Pieces earned are for the character you beat in Legend Races.
In addition to Carats and other rewards, players can obtain Star Pieces. These Star Pieces can be used to uncap Umamusume star levels or unlock Trainees you haven't pulled yet from the gacha.
Whether you win or lose in a Legend Race, you will still get Star Pieces from participating in it, so it is best to partake in this race whenever you can!

Legend Races are limited-time events in which players can participate to obtain character shards. Players must use tickets to participate and can use a maximum of three tickets a day per Legend Race.
Since race placement affects the rewards you receive, it's best to use the veteran character best suited for the race type in each event.
