The first treatise page can be encountered on the building to the left of where Al Mahani collapses, but it will fly away before you can collect it. It'll fly all the way to the back of the Observatory. You can keep track of it as it's blown in the wind via eagle vision, as the page will glow yellow.

From where you pick up the first treatise page, you'll need to head down the steps and move over a block so you can look inside the Observatory through a barred window. Use a throwing knife on the locked door across you to gain access to the room where the second treatise page is.
The third treatise page is found on top of the Observatory. From where Al Mahani is, parkour across the tightrope and ledges and use the vines on the wall to turn the corner to the east side of the building. There, you can land on a ledge where there's a bookshelf that you can move towards the wall. Climb up the wall to reach the top of the Observatory.

The treatise choice at the end of the Observatory Tale of Baghdad is more of a flavor option, as it doesn't affect the rewards of the quest. Telling Al-Mahani's Son that the treatise mattered most will taint his relationship with his father, as he'll believe his father's work mattered to his father than he did.
On the other hand, telling Al-Mahani's Son that he mattered most to his father will make him lash out at you, for allowing his father's last moments to be spent on the treatise, while he remains on good terms with his father.
