Nemesis bosses can be encountered by doing their respective Global Nemesis mission obtained from the Network Console!
You can check when a Nemesis boss will respawn through accessing the X menu when pressing the X button.
This menu will show a respawn countdown timer below the screen if you are connected online. Otherwise, this timer will not appear if you are playing offline.

A new feature in Xenoblade X Definitive Edition is the addition of the Nemesis respawn timer when you go online. This feature wasn't present in the original version on the Wii U making it difficult to figure out the Nemesis bosses respawn times.
New Content and Differences from the Wii U Version
Defeating a Nemesis boss will have them drop either Appendage Fragments that can be exchanged for Reward Tickets, armor that players can equip and materials used to craft items.
Nemesis Bosses (Nemeses) are superbosses that have high stats and unique skills that can be fought online with a time limit during Global Nemesis Missions.

Nemesis Bosses (Nemeses) also have a unique counter called Resurrection Points (RP) that essentially represents the amount of HP bars they have.
Each time you reduce their HP bar to zero, the RP counter gets reduced by one and their HP bar reverts back to being full. Once a Nemesis time limit runs out, the remaining RP count that they have will be sent to the server and will carry over to other players who fights the Nemesis.
