You can unlock the different field skills by completing associated missions titled Off the Record. However, due to updates for the definitive edition, most treasures in the game can be opened.
You should still complete these missions so you can obtain important resources like credits, probes, and materials.

The Archaeological Field Skill is used to gain resources from local objects in Mira like Alien Wreckage and Alien Storage.

You can salvage resources from machine parts like Skell wreckage or White Whale Debris with the Mechanical Field Skill.

Biological Field Skill is used when inspecting organic things like trees, insect nests, or even indigen dung.
In the Wii U version of the game, you needed to level up your BLADE Level to upgrade your Field Skills.
Since BLADE Level has been removed in the definitive edition, most of the treasures in Mira can be opened. Only a few treasures need a Field Skill.
New Content and Differences from the Wii U Version

Field skills are used to acquire treasures scattered across the map. While most of the treasures don't require you to unlock anything and are easily opened, some treasures are locked and require a specific field skill such as chopper and alien wreckages.
