The tables shown above currently lists down all known backyard extensions available in Manor Lords.
If the Burgage Plot is large enough, you'll see an additional icon which indicates that you can add Backyard Extensions. You can construct Backyard Extensions by hovering over a Burgage Plot and clicking the construction icon that appears on the UI Menu of the structure.
From there, the construction icon will expand to a list showing what backyard extensions can be built at the back of your selected Burgage Plot.
Some Backyard Extensions need specific Burgage Plot Levels and other requirements to be built. Additionally, all Backyard Extensions that require Burgage Plot Level 2 will convert all residing settlers into Artisans.
This means that those assigned as Artisans will not be able to change professions in your settlements. Backyard Extensions will also only allow Artisans to produce a single type of production material.
Backyard Extensions requiring Burgage Plot Level 1 can be replaced, but those necessitating Level 2 cannot be changed and will only remain as the extension they were built for.
How to Upgrade Your Burgage Plots
Backyard Extensions adds functionality to residential buildings, allowing families to produce resources such as Vegetables, Eggs, and Hides. You can even have families turn into Artisans to produce Bread and Ale!
At the right level, these backyard extensions can also help provide your militia with equipment such as Helmets, Warbows, and Sidearms. Battles are easier with fine equipment!

You stated that the fletcher is in level 2. Not on my screen. And your image of the extensions for level 2 shows no fletcher workshop either What am I missing?
